Turkey tips from experts at Butterball University

Some turkey-making tidbits from the experts at Butterball’s Turkey Talk-Line:

_ Don’t let turkey juices spill onto other things, like countertops, to prevent contamination. Clean it and anything it touches, quickly.

_ Use separate cutting boards for vegetables and raw meat, and another one just for cooked food.

_ Buy a pound and a half of turkey per person, if you want leftovers.

_ Make sure to leave enough time for thawing, which can take days depending on bird size and thawing method. You can keep a thawed turkey in the fridge for up to four days before cooking.

_ Put vegetables like onions and carrots in the pan while you roast.

_ Use a meat thermometer to determine when your turkey is done. Thigh temperatures must measure at least 180 degrees. Even if the meat is slightly pink, that’s fine as long as the temperature measures up.

_ Store your cooked turkey in the fridge when the meal is done. Don’t keep it at room temperature for longer than two hours.

10 Tips To Avoid Packing On Holiday Pounds

Packing on pounds is easy to do during the holidays. So here are 10 suggestions to help you keep the weight off from nutrition and health expert Dr. James D. Krystosik:

1. Get plenty of sleep. Being tired often triggers eating pangs.

2. Drink plenty of water. If you don’t take in liquid, the body retains it, increasing body weight by 10 to 15 pounds.

3. Curb appetite by loading up on “good carbs” - high fiber veggies like beans, whole grains such as oats and brown rice and fruits.

4. Limit your intake of proteins.

5. Keep stress levels down by walking, exercising and meditation. Stress can spark the appetite.

6. Avoid “bad carbs” like high-starch potatoes, breads and desserts.

7. Vinegar reduces the body’s absorption of “bad carbs” so use a variety of vinegar with olive oil for salad dressings.

8. Stay away from foods with hydrogenated oils and the sweetener aspartame. These substances do not aid in weight loss.

9. Choose foods with “good fats” like soy beans, avocado, nuts and seeds, fish like salmon, tuna and halibut and leafy green veggies.

10. Keep in touch with a pal who has similar diet and health goals to boost your willpower during the holiday food feast.

A benevolent fund has been established for one of our neighbors in need , Alan Watt. His wife Teresa is battling Stage 4 ovarian cancer and they are in need of financial help. She is 38 and they have 3 young girls. Jewell Cardwell featured their story in her column this week and so many wonderful people are stepping up with offers to help. Conversation Starters: Travel Pet-Peeves

Poor hygiene, oversized carry-on luggage and boisterous children rank high on the list of top travel peeves, according to the 2009 Rudeness Poll conducted by Travelocity. Here are the top 10 rudest travel behaviors:

1. When flying, our least favorite seatmate is someone who has poor hygiene (45%) or is coughing or sneezing (30%).

2. The most irritating on-board behavior is the passenger who kicks our seat (50%).

3. The most bothersome fellow travelers to encounter during a vacation are arguing families (31%), boisterous kids (28%) and rowdy college students (24%).

4. More than 80% of respondents feel that large passengers should be seated in two seats. While more than one-third of respondents believe that the large customer should be required to pay for that second seat, fully 44% think an obese passenger should be accommodated at no extra cost.

5. Getting on the plane: Passengers who wrestle with larger-than-allowed carry-on luggage topped the list of irritations when boarding a plane, according to 29% of all poll respondents.

6. Getting off the plane: Overwhelmingly, travelers who rush to deplane before those ahead of them are the most annoying, according to 57% of respondents.

7. Boisterous kids are a common annoyance for travelers, but people traveling without children are twice as likely to be bothered by them (30%) as those traveling with children in tow (15%).

8. Respondents say children running in restaurants (35%) and touching food at a buffet (33%) are their biggest pet peeves when it comes to kid travelers.

9. More than half of respondents think parents should remove a misbehaving child from a public setting and a significant one-third feel that such children should be reprimanded.

10. Travelers with children have different complaints. They are more likely to be bothered by topless sunbathers, men in Speedos and unattended kids at the pool.
